So summer is officially here and there is no better way to celebrate it than with lots of juices and smoothies. Of course there is the ubiquitous salad which you will chance upon at every diner and eatery. Of the many that are worth mentioning which use every ingredient under the sun, our personal favourite is the Watermelon and Feta salad. The disproportionate juiciness of the melon and the tangy salty taste of the feta are a match made in heaven.
It takes so little to make it and is almost always a hit with your guests. You can dress it up with arugula and pomegranate seeds or blueberries or dress it down with just a hint of balsamic.
Here is a suggested recipe
6 pieces of quartered watermelon
Juice of half a lime, divided, plus more to taste, some dusted sugar.
Salt to taste
5 cubes of hand crumbled Feta cheese
1 tablespoon hand torn fresh wild arugula
Sprinkle some balsamic.
Place the diced melon in a wide bowl or on a platter. Squeeze half a lime juice over, and then sprinkle with dusted sugar. Scatter with crumbled feta cheese, and hand torn arugula. Dig in.
If you are the adventurous kinds, turn it in a bite sized salad with a single cube of feta and a blueberry on top.
