MISO GINGER SALMON

Salmon fishing in the Yemen is an original storyline, and not your usual romantic comedy. It’s the film you can take your dad to, your mum to or even your boyfriend to.

This inspirational comedy was directed by Lasse Hallström, the director of Chocolat and the Oscar-winning screenwriter of Slumdog Millionaire. Salmon fishing in the Yemen follows the quest of the Sheikh to achieve his dream of well….. Salmon Fishing in the Yemen. The movie inspired me to create my own version of a Miso marinated Salmon.

The Recipe For it

400 gram skin-on salmon fillet cut in half
Marinade
2 table spoon miso paste
1 table spoon sake
1 table spoon mirin
1 table spoon soy sauce
2 tablespoons unseasoned rice vinegar.
2 table spoon minced green onions
¼ teaspoon sesame oil
Mix all the ingredients for the marinade in a large bowl.
Place the salmon in a plastic packet, skin side up. Spoon marinade and coat the salmon skin. Seal and keep in the refrigerator for 30 minutes to 1 hour. I don’t recommend longer than that as miso is quite salty.
Remove salmon from marinade and drain off excess marinade
Grill on a hot plate for approximately 3 minutes on each side. Please take care to keep the centre of the fillet pink.
Serve with steamed Jasmine rice.
