Breakfast Eats – Potato Toast


Did you know that eating a good, healthy breakfast helps in weight loss and weight management? But if you skip this first crucial meal of the day your blood sugar level will drop, it will reduce your energy levels and cognitive abilities. If you skip breakfast, you will also have a shorter attention span, take longer to react, have low blood sugar, and decreased productivity.

As a result you will get hungry and make you indulge in impulsive snacking in the morning and that could prove to be disastrous .  A good breakfast not only helps replenish your glucose levels but it will keep you physically active throughout the day.

So, there’s no undermining the importance of a substantial breakfast to start your day.

The old adage “eat breakfast like a king” holds true for my family as we prefer our breakfast cooked. Given below is my Mum’s recipe – Potato toast, an absolute favourite of the family. Children who are known to be fussy eaters also love this toast and this will be a good option for mothers who worry about healthy recipes for their growing kids.

Whole wheat brown bread/organic bread

Potatoes -3-4

Green chillies– 2-3

Ginger- small piece

Onion- 2 finely chopped

Garlic-3-4 flakes

Corianderfinely chopped


Salt to taste


Boil and mash the potatoes in a bowl. Grind green chillies, ginger and garlic to a coarse paste in a mixie. Add this mixture to the mashed potato mixture along with finely chopped onions and coriander. Apply this potato mixture to one side of the bread with a spoon, apply a coat of butter on it and toast it on both sides on a pan. Serve it hot with tomato sauce.
